The food service industry is looking for ways to satisfy the consumer’s desire for a healthier animal protein product. Goat meat, with its natural lean quality, can replace other sources of meat protein in many so called “designer” diets. Favorable qualities of goat meat can be an effective marketing tool for this product.
In addition, goat meat has no specific association with a rare, fatal zoonotic disease as do cattle (BSE or mad cow disease), sheep (scrapie), and poultry (avian flu).
